Marinate the Meat
In a bowl, combine garlic oil, white pepper, coriander roots, and thin soy sauce. Add the sliced pork loin or shrimp and mix well. Allow to marinate for at least 30 minutes.

Prepare the Vegetables
While the meat is marinating, prepare the vegetables by chopping scallions, slicing mushrooms, and trimming snow peas and baby corn.

Stir-Frying
In a large skillet or wok, heat a tablespoon of garlic oil over medium-high heat. Add minced garlic and stir-fry for about 30 seconds until fragrant.

Cook the Meat
Add the marinated pork or shrimp to the skillet and stir-fry until cooked through, about 5-7 minutes.

Serve
Once all ingredients are well combined and cooked, remove from heat and serve hot with rice or noodles.
