Prep the Ingredients
Chop the salmon into bite-sized chunks. Slice the squash, carrots, and bell peppers into thin strips. Set aside the snow peas and green peas.

Sauté the Vegetables
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the carrots, squash, and bell peppers. Sauté for about 4-5 minutes until they begin to soften.

Add Peas and Salmon
Stir in the snow peas and green peas, then add the salmon chunks to the skillet. Sprinkle with salt and black pepper. Cook for an additional 3-4 minutes until the salmon is just cooked through.

Make the Sauce
Add the red curry paste to the skillet, stirring to combine. Pour in the coconut milk and bring to a gentle simmer. Cook for another 2-3 minutes, allowing the flavors to meld.

Add Basil and Serve
Stir in the fresh basil leaves just before serving. Adjust seasoning if necessary. Serve hot over rice or noodles.
