    Prepare the Ingredients

    Slice the chicken or pork into bite-sized pieces. Chop the onion, red and green bell peppers, and mushrooms. Trim the ends of the green beans.

    Sauté the Protein

    In a large skillet or wok, heat vegetable oil over medium-high heat. Add the chicken or pork and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the chopped onion, garlic, ginger, and sauté until the onions are translucent. Then add the red and green bell peppers, mushrooms, and green beans. Stir-fry for about 3-5 minutes.

    Return the cooked chicken or pork to the skillet. Add the tamarind paste and curry powder. Stir everything to combine and cook for an additional 2-3 minutes, ensuring the protein and vegetables are well-coated with the spices.

    Taste and adjust seasoning with additional salt and pepper if needed. Serve hot with rice or bread.
