    Prepare the Ingredients

    Slice the beef or salmon fillet thinly and prepare all the vegetables by chopping and slicing as indicated.

    Sauté the Protein

    In a large pan or wok, heat the vegetable oil over medium-high heat. Add the thinly sliced beef or salmon and sauté for about 2-3 minutes until browned. Remove from the pan and set aside.

    Make the Curry Sauce

    In the same pan, add the Panang curry paste and sauté for 1-2 minutes until fragrant. Pour in the coconut milk, stirring well to combine.

    Add the Vegetables

    Add the kaffir lime leaves, string beans, bell peppers, mushrooms, baby corn, and bamboo shoots to the curry sauce. Cook for 5-7 minutes until the vegetables are tender.

    Combine Everything

    Return the sautéed beef or salmon to the pan. Add the fish sauce and sugar, stirring to coat. Cook for an additional 2-3 minutes.

    Finish with Basil

    Remove from heat and stir in the fresh basil leaves. Serve hot.
