Make the Hoecakes
In a large mixing bowl, combine the cornmeal, flour, baking powder, and salt. In a separate bowl, whisk together the buttermilk, egg, and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until just combined.
Cook the Hoecakes
Heat a non-stick skillet or griddle over medium heat. Grease lightly with oil or butter. Pour about 1/4 cup of batter onto the skillet for each hoecake. Cook until bubbles form on the surface, about 3-4 minutes, then flip and cook for another 2-3 minutes until golden brown. Repeat with remaining batter.
Prepare Honey Butter
In a small bowl, mix softened butter with honey until well combined. Adjust the sweetness to your liking.
