Preparation
Marinate the Chicken
In a bowl, combine chicken breasts and buttermilk. Cover and refrigerate for at least 30 minutes to marinate.
Prepare the Flour Mixture
In a large bowl, mix together flour, cornstarch, baking powder, garlic powder, onion powder, paprika, salt, and black pepper.
Fry the Chicken
Heat vegetable oil in a deep frying pan over medium-high heat. Remove chicken from buttermilk, letting excess drip off, then dredge in the flour mixture. Fry chicken for about 6-8 minutes per side or until golden brown and cooked through. Drain on paper towels.
Make the Waffles
Prepare waffle batter according to package instructions by mixing waffle mix and water. Preheat waffle iron and cook waffles until golden brown.
Assembly
Place a waffle on a plate, top with fried chicken, drizzle with honey, and serve with maple syrup on the side.
