    In a large mixing bowl, combine the all-purpose flour and salt. Stir until well mixed.

    Add the unsalted butter, cut into small pieces, to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing gently until the dough comes together. Do not overwork the dough.

    In a medium bowl, combine the diced peaches, granulated sugar, ground cinnamon, and lemon juice. Stir gently until the peaches are evenly coated with the sugar and spices.

Assembling and Frying
