Preparation Directions
Prepare the Chicken
If not already cooked, poach the chicken breasts in boiling water for about 15-20 minutes until fully cooked. Let them cool, then shred or chop into bite-sized pieces.
Mix the Base
In a large mixing bowl, add the cooked chicken, mayonnaise, and lemon juice. Stir until the chicken is well coated with mayonnaise.
Add Crunch
Fold in the finely chopped celery and chopped pecans into the chicken mixture. Ensure they are evenly distributed throughout.
Incorporate Fruits
Gently mix in the halved red grapes, being careful not to mash them.
Season
Add the sliced green onion, salt, and black pepper to taste. Stir until everything is combined.
Chill and Serve
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld. Serve chilled on a bed of lettuce or as a sandwich filling.
