    Wash and peel the Russet potatoes. Cut them into even-sized sticks, approximately 1/4 inch thick.

    Place the cut potato sticks into a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps in achieving crispier fries. After soaking, drain and pat the potatoes dry with a clean towel.

    In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a kitchen thermometer to check the temperature.
