1. Prepare the Potatoes
Preheat your oven to 400°F (200°C). Wash the russet potatoes and pierce them several times with a fork. Bake the potatoes in the preheated oven for about 45-60 minutes, or until they are tender.
2. Roast the Garlic
While the potatoes are baking, peel the garlic cloves and wrap them in aluminum foil with a drizzle of olive oil. Roast in the oven alongside the potatoes for about 30 minutes, until soft and fragrant.
3. Mash the Potatoes
Once the potatoes are baked, let them cool slightly, then cut them in half lengthwise. Scoop out the insides into a large bowl, leaving the skins intact.
4. Mix in Ingredients
Add the roasted garlic (squeezed from their skins), butter, sour cream, heavy cream, shredded cheddar cheese, and chopped green onions to the potato insides. Season with salt, black pepper, and paprika to taste. Mash until smooth and creamy.
5. Refill and Bake
Spoon the mashed potato mixture back into the potato skins. Place the stuffed potatoes on a baking sheet and bake at 375°F (190°C) for an additional 20-25 minutes, until heated through and golden on top.
6. Serve
Remove from the oven and let cool for a few minutes. You can garnish with additional green onions or cheese if desired. Serve warm.
