Preheat your oven to 425°F (220°C). Wash the fingerling potatoes thoroughly and cut them in half lengthwise.

In a large bowl, toss the halved potatoes with olive oil, salt, and black pepper until they are well coated.

Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 30-35 minutes or until golden brown and crispy, flipping halfway through.

While the potatoes are roasting, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, and salt in a bowl. Slowly drizzle in the olive oil while mixing until well combined.
