    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized (about 30-40 minutes).

    Add Liquids

    Pour in the brandy and red wine, scraping the bottom of the pot to deglaze. Let it simmer for about 10 minutes.

    Simmer the Soup

    Add the beef broth, salt, black pepper, and thyme. Bring the mixture to a boil, then lower the heat and let it simmer for another 20 minutes.

    Prepare the Baguette

    While the soup is simmering, slice the baguette into 1-inch thick slices. Toast them until golden brown.

    Preheat your broiler. Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top of each bowl, and sprinkle with equal parts of white cheddar and Swiss cheese. Broil until the cheese is bubbly and golden brown. Serve immediately.
