    Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

    Generously season both sides of the filet mignon with salt, black pepper, and fresh rosemary.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until it shimmers.

    Add the filet mignon to the skillet and sear for 4-5 minutes on one side until a nice crust forms.

    Flip the steak and add the butter to the pan. Cook for an additional 4-5 minutes, spooning the melted butter over the steak for added flavor.
