    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into waffle fry shapes using a waffle fry cutter or a knife.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Season the Fries

    In a large bowl, toss the dried waffle fries with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.

    Bake the Fries

    Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.

    Add Cheese and Herbs

    Remove from the oven and sprinkle with Parmesan cheese and chopped fresh parsley (if using). Return to the oven for an additional 5 minutes until the cheese is melted.
