Prepare the Vegetables
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions, green bell pepper, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender. Season with salt and black pepper. Remove from skillet and set aside.

Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil and increase the heat to high. Add the thinly sliced ribeye steak to the skillet. Cook for about 3-4 minutes, stirring frequently, until browned and cooked through. Season with additional salt and pepper to taste.

Combine and Melt Cheese
Return the sautéed vegetables to the skillet with the steak. Mix well to combine. Lay slices of provolone cheese (or pour Cheez Whiz) over the mixture and cover the skillet with a lid. Let it cook for another 2-3 minutes until the cheese is melted.

Assemble the Sandwiches
Split the hoagie rolls and fill each with the cheesesteak mixture. Serve hot and enjoy!
