Marinating the Meat

Prepare the Marinade
In a large mixing bowl, combine the plain yogurt, olive oil, minced garlic, ground cumin, ground paprika, ground turmeric, ground coriander, salt, black pepper, and lemon juice. Mix well until fully combined.

Marinate the Chicken
Add the boneless chicken thighs to the marinade and ensure that they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

Prepare Rotisserie
Preheat your vertical rotisserie or grill to medium-high heat.

Rest the Meat
Once cooked, remove the chicken from the heat and let it rest for a few minutes before slicing it thinly.
Assembling the Shawarma

Prepare the Pita
Warm the pita bread slightly on the grill or in the oven for a few minutes.

Place slices of the cooked chicken into the warm pita. Top with diced tomato, cucumber, sliced red onion, fresh parsley, and drizzle with tahini sauce or garlic sauce.
