Method
Prepare the Filo Dough

Thaw the Filo Dough
Remove the filo dough from the freezer and let it thaw in the refrigerator overnight or at room temperature for about 2 hours.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Baking Dish
Grease a 9x13 inch baking dish with melted butter.
Make the Nut Filling

Mix the Nut Filling
In a mixing bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Mix well and set aside.
Assemble the Baklava

Add Nut Filling
Spread 1/3 of the nut mixture evenly over the layered filo.

Continue Layering
Continue layering filo sheets (buttering each one) and the nut filling, alternating until all the filling is used, finishing with a top layer of 8 filo sheets.

Cut the Baklava
Using a sharp knife, cut the baklava into diamond or square shapes.
Bake the Baklava

Bake
Bake in the preheated oven for about 45-50 minutes, or until the baklava is golden brown.
Prepare the Honey Syrup

Cook the Syrup
In a saucepan, combine granulated sugar, water, honey, and vanilla extract. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes.

Cool the Syrup
Remove the syrup from heat and let it cool slightly.
Finish the Baklava

Pour the Syrup
Once the baklava is done baking, remove it from the oven and immediately pour the warm honey syrup over the hot baklava.

Let it Soak
Allow the baklava to cool completely and soak in the syrup for at least 4 hours, preferably overnight.
