Prepare the Coffee

Brew espresso and let it cool to room temperature.

Make the Mascarpone Mixture

In a mixing bowl, whisk together egg yolks and sugar until pale and fluffy. Add vanilla extract and mascarpone cheese, and mix until smooth.

Whip the Cream

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until combined.

Assemble the Tiramisu

Dip ladyfinger cookies briefly in the cooled espresso and layer half in the bottom of a dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.

Chill and Serve

Cover and refrigerate for at least 4 hours, preferably overnight. Before serving, dust the top with cocoa powder.
