Make the Crust

In a bowl, mix the flour, sugar, and salt. Add the diced butter and mix until the mixture resembles coarse crumbs. Stir in ice water, one tablespoon at a time, until the dough comes together. Wrap in plastic and refrigerate for at least 30 minutes.

Roll Out the Crust

Preheat the oven to 425°F (220°C). Roll out the chilled dough on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and trim any excess dough. Poke holes in the bottom with a fork.

Pre-bake the Crust

Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment, and bake for an additional 5 minutes until lightly golden. Let cool.

Prepare the Filling

In a large bowl, combine pumpkin puree, sweetened condensed milk, eggs, cinnamon, nutmeg, ginger, salt, and vanilla extract. Mix until well combined.

Pour and Bake

Pour the pumpkin filling into the pre-baked crust. Bake at 350°F (175°C) for 45-50 minutes, or until a knife inserted near the center comes out clean.

Allow the pie to cool completely on a wire rack before serving. Optionally, serve with whipped cream.
