Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth. Add the granulated sugar and beat until well combined. Incorporate the sour cream, heavy cream, and scraped seeds from the vanilla beans. Mix until smooth.
Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.
Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 55-65 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
Chill the Cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Once cool, refrigerate for at least 4 hours or overnight.
Brûlée the Topping
Before serving, sprinkle the top of the cheesecake with 2 tablespoons of granulated sugar. Using a kitchen torch, caramelize the sugar until it forms a crispy, golden layer. Allow to cool for a minute before slicing.
