Method

Preparing the Turkey

1

Prepare the Garlic

Preheat the oven to 325°F (165°C). Peel 400 cloves of garlic and set aside.

2

Prepare the Turkey

Rub the turkey with olive oil, salt, and black pepper. Stuff the turkey cavity with the garlic cloves, thyme, and rosemary.

3

Roast the Turkey

Place the turkey in a roasting pan and add chicken broth. Roast for approximately 13-15 minutes per pound, basting occasionally with pan juices.

Making the Stuffing

4

Sauté Vegetables

In a large skillet, melt butter over medium heat. Add diced onion and celery, sautéing until soft.

5

Combine Stuffing Ingredients

In a large bowl, combine sautéed vegetables, bread cubes, sage, thyme, salt, and pepper. Pour in chicken broth until moist, then mix well.

6

Stuff the Turkey

Stuff the turkey with the prepared stuffing before roasting.

Making the Gravy

7

Prepare the Gravy

After the turkey is done roasting, remove it from the pan and let rest. Pour drippings into a saucepan, whisk in flour, and cook until golden brown. Gradually add chicken broth and whisk until thickened.

8

Season the Gravy

Season the gravy with salt and pepper to taste. Serve alongside the turkey and stuffing.
