Roast the Garlic

Preheat your oven to 400°F (200°C). Place the garlic cloves in a baking dish and drizzle with half of the extra virgin olive oil. Cover with aluminum foil and roast for about 30-35 minutes or until the garlic is soft and golden.

Prepare the Anchovies

While the garlic is roasting, finely chop the anchovy fillets.

Combine Ingredients

In a saucepan, heat the remaining olive oil and the butter over low heat. Add the roasted garlic (squeezed from their skins) and the chopped anchovies. Stir until the anchovies dissolve and the mixture is warm.

Garnish and Serve

Remove from heat and garnish with chopped fresh parsley. Serve warm with crusty bread or fresh vegetables for dipping.
