    Prep the Vegetables

    Dice the bell peppers and slice the jalapeño peppers. Rinse and chop the cilantro. Set aside.

    Prepare the Black Beans

    Drain and rinse the black beans. Set aside.

    Beat the Eggs

    In a bowl, crack the eggs and whisk them until well combined. Season with salt and pepper to taste.

    In a non-stick skillet over medium heat, add a little oil or butter. Pour in the beaten eggs and stir gently until they are softly scrambled. Remove from heat and set aside.

    In the same skillet, add the diced bell peppers and sauté for about 2-3 minutes until slightly softened. Then, add the black beans, diced tomatoes, and jalapeño peppers. Stir well and cook for an additional 2 minutes.

    Add the scrambled eggs to the skillet mixture and sprinkle in the shredded cheddar cheese. Stir to combine everything well and cook for another minute until the cheese is melted.
