Preparing Vegetables

    Prepare Potatoes

    Peel the potatoes and cut them into evenly sized chunks. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes until tender. Drain and set aside.

    Prepare Carrots and Green Beans

    Peel the carrots and cut them into thin slices. Trim the ends of the green beans. Steam the carrots and green beans together for about 5-7 minutes until they are tender but still crisp. Set aside.

Preparing the Gravy

    Make the Roux

    In a saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 2 minutes until the mixture turns a light golden color.

    Add Broth

    Gradually add the chicken broth to the roux, whisking constantly to prevent lumps from forming. Continue to whisk until the mixture thickens, about 5-7 minutes.

    Season the Gravy

    Stir in the salt, black pepper, and thyme. Let the gravy simmer for a few more minutes, then remove from heat.

Assembling the Dish

    On a large serving platter, layer the sliced turkey first. Arrange the cooked potatoes, carrots, and green beans around the turkey. Pour the gravy generously over the turkey and vegetables before serving.
