Preparation

  1. 1

    Prepare the Seafood

In a pot of boiling salted water, add the lobster tails and cook for about 6-8 minutes until they turn bright red. Remove and let cool, then remove the meat from the shells and chop into bite-sized pieces.

  2. 2

    Sauté the Shrimp and Calamari

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and calamari, cooking for about 3-4 minutes or until the shrimp is pink and opaque. Remove from the skillet and set aside.

  3. 3

    Cook the Pasta

In the same pot of boiling water, add the spaghetti or linguine and cook according to package instructions until al dente. Drain and reserve about 1 cup of pasta water.

  4. 4

    Prepare the Vegetables

In the same skillet used for the seafood, add the remaining olive oil and sauté the minced roasted garlic for about 1 minute. Then add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Finally, add the spinach and cook until just wilted.

Assembly

  1. 5

    Combine Ingredients

Add the cooked spaghetti or linguine to the skillet with the sautéed vegetables. Stir in the chopped lobster, shrimp, and calamari. Mix well, adding reserved pasta water a little at a time until the desired sauce consistency is achieved.

  2. 6

    Season and Serve

Season with salt and black pepper to taste. Garnish with fresh parsley before serving. Enjoy your Stamford Pasta Special!
