Prepare the Seafood
In a pot of boiling salted water, add the lobster tails and cook for about 6-8 minutes until they turn bright red. Remove and let cool, then remove the meat from the shells and chop into bite-sized pieces.

Sauté the Shrimp and Calamari
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and calamari, cooking for about 3-4 minutes or until the shrimp is pink and opaque. Remove from the skillet and set aside.

Prepare the Vegetables
In the same skillet used for the seafood, add the remaining olive oil and sauté the minced roasted garlic for about 1 minute. Then add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Finally, add the spinach and cook until just wilted.

Season and Serve
Season with salt and black pepper to taste. Garnish with fresh parsley before serving. Enjoy your Stamford Pasta Special!
