Preparing the Steak

    Season the Skirt Steak

    In a small bowl, mix together olive oil, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the skirt steak and let it marinate for at least 30 minutes at room temperature.

    Cook the Skirt Steak

    Preheat a grill or a cast-iron skillet over medium-high heat. Once hot, add the skirt steak and cook for 3-5 minutes per side for medium-rare, or until preferred doneness. Remove from heat and let it rest for 5 minutes before slicing against the grain.

    Chop the Vegetables

    While the steak is marinating, chop the bell peppers, zucchini, and red onion into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the chopped vegetables along with salt and black pepper. Sauté for about 5-7 minutes until they are tender but still slightly crisp. Remove from heat.

Preparing the Potatoes

    Cook the Potatoes

    Wash the potatoes and pierce them with a fork. Microwave on high for about 8-10 minutes, turning halfway through, until soft. Alternatively, boil them in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Once cooked, drain and let cool slightly. Mash the potatoes with butter, salt, and black pepper until smooth and creamy.

Serving

    Plate the Dish

    On a plate, place a generous serving of the sautéed vegetables next to a scoop of mashed potatoes. Slice the skirt steak and arrange it on the plate. Serve immediately and enjoy!
