Steak Preparation

Season the Steak
Pat the rib-eye steaks dry with paper towels. Season both sides generously with salt and black pepper.

Heat the Pan
In a large skillet, heat olive oil over medium-high heat until shimmering.

Sear the Steak
Add the seasoned rib-eye steaks to the hot skillet. Sear for 4-5 minutes without moving them.

Add Butter and Aromatics
Flip the steaks and add butter, garlic cloves, and fresh rosemary or thyme to the pan. Continue cooking for another 4-5 minutes, basting the steaks with the melted butter.

Check for Doneness
Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C).

Rest the Steak
Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

Steam Broccoli
In a medium pot, bring water to a boil. Place the broccoli florets in a steamer basket over the boiling water, cover, and steam for 5-7 minutes until bright green and tender.

Drizzle with olive oil and season with salt and black pepper before serving.
