Preparing Chicken Bites

Cut the Chicken
Cut the boneless, skinless chicken breasts into bite-sized pieces, approximately 1-inch cubes.

Prepare the Breading Stations
In one bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. In another bowl, whisk together the eggs and milk until well combined.

Coat the Chicken
Dip each piece of chicken into the egg mixture first, then coat it in the flour mixture, ensuring it is fully covered. Shake off any excess breading.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken Bites
Carefully add the coated chicken pieces to the hot oil in batches. Fry for about 4-5 minutes, or until golden brown and cooked through. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain.
