Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

Making the Sauce

    Cook the Bacon

    In a large skillet, heat the olive oil over medium heat. Add the bacon slices and cook until crispy. Remove bacon, crumble, and set aside.

    Sauté the Aromatics

    In the same skillet with the bacon fat, add diced onion and minced garlic. Sauté until translucent and fragrant, about 2-3 minutes.

    Add Tomatoes and Vodka

    Stir in the crushed tomatoes and vodka. Bring the mixture to a simmer and cook for about 5 minutes to allow the alcohol to cook off.

    Creamy Finish

    Reduce the heat to low and stir in the heavy cream. Mix until well combined and season with salt, black pepper, and red pepper flakes.

    Combine Sauce and Pasta

    Add the cooked penne pasta to the sauce and toss well to coat. If using, add the cooked chicken or shrimp at this stage and mix until heated through.

    Add Cheese and Herbs

    Stir in the grated Parmesan cheese and fresh basil just before serving. Adjust seasoning if needed.

Serving the Dish

    Plate the Pasta
