Turkey

Prepare the Turkey
Preheat your oven to 325°F (165°C). Remove the turkey giblets and pat the turkey dry with paper towels.

Season the Turkey
Rub the whole turkey with olive oil, then season generously with salt, black pepper, garlic powder, onion powder, rosemary, and thyme. Stuff the cavity with a halved lemon.

Roast the Turkey
Place the turkey in a roasting pan and roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (74°C).

Rest the Turkey
Remove the turkey from the oven and let it rest for at least 20 minutes before carving.
Cornbread Stuffing

Prepare the Stuffing Mixture
In a large skillet, sauté diced celery and onion in a little olive oil over medium heat until softened, about 5-7 minutes.

Combine Ingredients
In a large bowl, combine the crumbled cornbread, sautéed vegetables, beaten eggs, chicken broth, salt, pepper, and sage. Mix well.

Bake the Stuffing
Transfer the stuffing mixture into a greased baking dish and bake at 350°F (175°C) for 30-35 minutes, until golden brown on top.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.
Broccoli

Prepare the Broccoli
Toss the broccoli florets with olive oil, salt, and pepper in a large bowl.

Roast the Broccoli
Spread the seasoned broccoli on a baking sheet and roast in the oven at 425°F (220°C) for 15-20 minutes, or until tender and slightly charred.
Gravy

Make the Roux
In a saucepan, whisk together the turkey drippings and flour over medium heat until smooth and bubbling.

Slowly whisk in the chicken broth, continuing to stir until the gravy thickens. Season with salt and pepper to taste.
