Method
Prepare the Onion Rings

Slice the Onions
Peel and slice the large onions into thick rings, about 1 inch wide. Separate the rings and set aside.

Make the Batter
In a mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, black pepper, and cold water until smooth. The batter should be thick enough to coat the onion rings.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off, and carefully place them in the hot oil. Fry in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Prepare the Corned Beef Hash Filling

Add Corned Beef
Stir in cooked corned beef and cook for an additional 5 minutes until heated through. Remove from heat and set aside.
Poach the Eggs

Prepare the Poaching Water
In a saucepan, bring water to a gentle simmer and add white vinegar.

Poach the Eggs
Crack eggs into a small bowl and gently slide them into the simmering water. Cook for 3-4 minutes until whites are set but yolks remain runny. Remove with a slotted spoon.
Make the Hollandaise Sauce

Melt the Butter
In a small saucepan, melt butter over low heat until completely liquid.

Whisk the Egg Yolks
In a mixing bowl, whisk together egg yolks and lemon juice until pale and slightly thickened.

Combine
Slowly drizzle in melted butter while whisking continuously until the sauce is smooth and thickened. Season with salt and cayenne pepper.
Assemble the Dish

Stuff the Onion Rings
Take each fried onion ring and fill it with a generous spoonful of corned beef hash filling.

Add Hollandaise and Cheese
Drizzle hollandaise sauce over the poached eggs and sprinkle with shredded cheddar cheese.
