    Cook the bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the pan and place on paper towels to drain excess fat.

    Scramble the eggs

    In a bowl, whisk the eggs until well blended. In the same skillet with a little bit of bacon grease, pour in the eggs and scramble them over medium heat until fully cooked, about 2-3 minutes. Add salt and pepper to taste.

Assembling the Quesadilla

    Layer the ingredients

    On one half of each flour tortilla, layer the scrambled eggs, crumbled bacon, and sprinkle with pepper jack cheese.

    Fold and grill

    Fold the tortillas in half over the filling. In the skillet, add a little oil if needed and cook the quesadillas over medium heat until golden brown and the cheese is melted, about 3-4 minutes per side.

Serving

    Slice and serve

    Once the quesadillas are cooked, remove them from the skillet and let cool for a minute. Cut into wedges and serve with salsa and sour cream on the side.
