Season the Potatoes
Rub each potato with olive oil and sprinkle with salt and black pepper. Place the potatoes directly on the oven rack or on a baking sheet.

Scoop the Potatoes
Once cooled, cut each potato in half lengthwise. Carefully scoop out the insides, leaving about 1/4 inch of potato on the skin. Reserve the scooped-out potato for another use.

Arrange the Skins
Place the potato halves on a baking sheet, cut side up. Brush the insides lightly with olive oil and season with a pinch of salt.

Add the Cheese and Bacon
Fill each potato skin with shredded cheddar cheese and crumbled bacon, distributing evenly among the skins.

Broil the Skins
Set the oven to broil. Broil the potato skins for 2-5 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.

Serve with Toppings
Remove the potato skins from the oven. Top each with a dollop of sour cream and a sprinkle of chopped green onions. Serve immediately.
