Preparation

    Prepare the Chorizo (Optional)

    If using chorizo, heat a skillet over medium heat. Add the chorizo and cook for about 5-7 minutes, or until browned and cooked through. Remove from the skillet and set aside.

    Warm the Refried Beans

    In the same skillet, warm the refried beans over medium heat until heated through, stirring occasionally. Set aside.

    Prepare the Salsa

    If using homemade roasted tomato salsa, ensure it is prepared in advance. If using store-bought, have it ready to serve.

Cooking

    Fry the Eggs

    In a non-stick skillet, add a little oil over medium heat. Crack the eggs into the skillet, one at a time. Cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper to taste.

    Melt the Cheese

    While the eggs are cooking, place the warmed refried beans on a plate. Sprinkle the pepper jack cheese on top of the beans and place the plate in a microwave for 30 seconds, or until the cheese is melted.

    Prepare the Tortillas

    In a separate skillet, heat the corn tortillas for about 30 seconds on each side until they are warm and slightly crispy. You can also fry them in oil for a more traditional preparation.

Assembly

    Assemble the Dish

    On each plate, layer the melted cheese and refried beans, followed by placing two over-easy eggs on top. Add a dollop of guacamole, a generous spoonful of roasted tomato salsa, and a drizzle of sour cream. If using, top with the cooked chorizo.

    Serve immediately while warm, with additional sides of salsa and guacamole if desired.
