Preheat your oven to 425°F (220°C) to prepare for baking the fries.

Wash and peel the russet potatoes. Cut them into thin strips, approximately 1/4 inch thick, to resemble traditional fries.
Cooking the Fries

Place the cut potato strips in a large bowl and soak them in cold water for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

After soaking, drain the potatoes and pat them dry with paper towels to ensure they are as dry as possible.

Spread the coated potato strips in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Once the fries are done baking, remove them from the oven and immediately toss them with the herb mixture, grated parmesan cheese, and truffle oil. Ensure the fries are well coated.
