    Cook the Brown Rice

    If not already cooked, prepare the brown rice according to package instructions. Typically, combine 1 cup of brown rice with 2 cups of water, bring to a boil, reduce the heat, and simmer for about 45 minutes until tender.

    Prepare the Asparagus

    In a skillet, heat half the olive oil over medium heat. Add the asparagus pieces and sauté for about 5-7 minutes until they are tender but still crisp. Season with a pinch of salt and pepper, then remove from the skillet and set aside.

    Cook the Chicken

    If not pre-cooked, grill the chicken breast until fully cooked, about 6-7 minutes per side depending on thickness. Once cooked, dice the chicken into small pieces.

Cooking the Omelette

    Prepare the Egg Whites

    In a bowl, whisk the egg whites until frothy. Season with salt and pepper to taste.

    Cook the Omelette

    In the same skillet used for the asparagus, add the remaining olive oil and heat over medium-high heat. Pour in the whisked egg whites and let them cook for about 2 minutes until the edges start to set.

    Once the edges are set, add the diced grilled chicken and sautéed asparagus evenly over one half of the omelette. Allow to cook for another 2-3 minutes until the egg whites are fully set.

    Gently fold the omelette in half over the fillings and let it cook for an additional minute. Carefully slide the omelette onto a plate and serve with a side of cooked brown rice.
