Grilled Porterhouse Steak Recipe

Steak Preparation

    Prepare the Steak

    Remove the porterhouse steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

    Season the Steak

    Rub both sides of the steak with olive oil, then season generously with salt and black pepper.

    Grill the Steak

    Preheat the grill to high heat. Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Rest the Steak

    Remove the steaks from the grill and let them rest for 5-10 minutes before slicing.

Chive Mashed Potatoes

    Boil the Potatoes

    Peel the russet potatoes and cut them into quarters. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the unsalted butter, milk, chopped chives, salt, and black pepper. Mash until smooth and creamy.

Haricot Verts Preparation

    Prepare the Beans

    Trim the ends of the haricot verts and rinse them under cold water.

    Sauté the Beans

    In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the haricot verts and sauté for about 4-5 minutes until tender-crisp. Season with salt and black pepper to taste.

Red Wine Sauce

    Sauté the Shallots

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 3-4 minutes.

    Add Wine and Broth

    Pour in the red wine and beef broth. Bring to a simmer and allow to reduce by half, about 10-15 minutes.

    Finish the Sauce

    Season with salt and black pepper to taste. Whisk in any remaining butter for a glossy finish.
