    Prepare the batter

    In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper. Gradually add the beer until a smooth batter forms.

    Heat the oil

    In a deep pot or fryer, heat the oil to 350°F (175°C). Make sure there is enough oil to fully submerge the fish.

    Batter the fish

    Dip each Alaskan cod fillet into the batter, ensuring it is fully coated.

    Fry the fish

    Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Tartar Sauce

    Combine ingredients

    In a bowl, mix together the roasted corn, mayonnaise, Dijon mustard, lemon juice, and chopped chives. Season with salt and pepper to taste. Set aside in the refrigerator until ready to serve.

French Fries

    Prepare the potatoes

    Peel the Russet potatoes and cut them into uniform sticks. Rinse them in cold water to remove excess starch.

    Dry the potatoes

    Pat the potato sticks dry with a towel to ensure they fry properly.

    Fry the fries

    In the same oil used for the fish, fry the potato sticks in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt while hot.

    Arrange the fried fish and fries on a plate, serve with a side of tartar sauce and drizzle with malt vinegar to taste.
