Preparing the Fries

    Frying the Fries

    In a large pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F). Carefully add the waffle cut fries in batches, ensuring not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and drain them on paper towels. Season with salt to taste.

    Preparing the Gravy

    In a small saucepan, combine the brown gravy mix with 500 ml of water over medium heat. Stir constantly until the mixture comes to a boil and thickens, about 3-5 minutes. Once thickened, reduce the heat to low to keep warm.

Assembling the Disco Fries

    Layering the Dish

    Preheat your oven to 200°C (400°F). On a large baking sheet, spread the crispy waffle fries in an even layer. Sprinkle the mozzarella and cheddar cheeses evenly over the fries. Place the baking sheet in the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.

    Remove the baked fries from the oven and drizzle the warm brown gravy generously over the top. Serve immediately while hot.
