Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading Mixture
In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Coat the Calamari
Pour the buttermilk into a separate bowl. Dip each calamari ring into the buttermilk, allowing excess to drip off, then dredge in the flour mixture. Ensure they are well-coated.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in small batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Season the Sauce
Stir in the dried oregano, sugar, and salt. Bring the sauce to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld.
