    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo sausage until browned and fully cooked, about 5-7 minutes. Break it apart with a spatula while cooking.

    Scramble the Eggs

    In a bowl, whisk the large eggs until well combined. Once the chorizo is cooked, push it to one side of the skillet and pour the eggs into the other side. Scramble the eggs until cooked through, mixing with the chorizo.

Assembling the Quesadilla

    Layer Ingredients

    On half of each flour tortilla, layer a portion of the chorizo and egg mixture, followed by a generous amount of shredded jalapeño jack cheese.

    Fold and Cook

    Fold the tortilla in half over the filling. In the same skillet, add a little oil if needed and cook each quesadilla over medium heat for about 3-4 minutes on each side or until golden brown and the cheese is melted.

Serving

    Serve with Condiments

    Cut the quesadillas into wedges and serve with salsa verde, salsa rojo, and guacamole on the side for dipping.
