Chicken and Asparagus

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper on both sides.

    Sauté the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.

    Cook the Asparagus

    In the same skillet, add the asparagus and sauté for about 3-4 minutes until tender but still crisp. Remove from skillet and set aside.

    Melt the Cheese

    Return the chicken to the skillet, top each breast with sautéed asparagus and sprinkle with shredded mozzarella cheese. Cover the skillet with a lid to melt the cheese, about 2-3 minutes.

Mushroom Madeira Sauce

    Sauté the Mushrooms

    In the same skillet, add butter and let it melt. Add sliced mushrooms and minced garlic. Sauté for about 5 minutes until the mushrooms are browned.

    Add Liquids

    Pour in the Madeira wine and chicken broth. Bring to a simmer and let it cook for about 5 minutes.

    Thicken the Sauce

    In a small bowl, mix cornstarch with water to form a slurry. Stir the slurry into the sauce and cook for an additional 2-3 minutes until the sauce thickens.

    Combine and Serve

    Pour the mushroom madeira sauce over the chicken and serve immediately.

Mashed Potatoes

    Boil the Potatoes

    In a large pot, add diced potatoes and cover with water. Bring to a boil and cook for 15-20 minutes or until tender.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.
