Scramble the Eggs
In a medium bowl, crack the three large eggs and whisk them until fully combined. Season with salt and pepper to taste.

Prepare the Fillings
Dice the ham and tomato into small pieces. Grate the cheddar cheese if not pre-shredded.
Cooking

Cook the Eggs
Heat a non-stick skillet over medium heat. Add a bit of oil or butter and pour in the whisked eggs. Cook, stirring gently until the eggs are fully cooked but still moist, about 3-4 minutes.

Assembling the Burrito

Fill the Tortillas
Lay each flour tortilla on a flat surface. Spoon half of the egg mixture onto the center of each tortilla.

Add Toppings
Top each filled tortilla with guacamole, salsa, and a dollop of sour cream.

Roll the Burrito
Fold the sides of the tortilla inwards, then roll from the bottom up to enclose the filling. Make sure to keep it tight.

Cut the burrito in half if desired, and serve warm with extra salsa and sour cream on the side.
