    Scramble the Eggs

    In a medium bowl, crack the three large eggs and whisk them until fully combined. Season with salt and pepper to taste.

    Prepare the Fillings

    Dice the ham and tomato into small pieces. Grate the cheddar cheese if not pre-shredded.

Cooking

    Cook the Eggs

    Heat a non-stick skillet over medium heat. Add a bit of oil or butter and pour in the whisked eggs. Cook, stirring gently until the eggs are fully cooked but still moist, about 3-4 minutes.

    Combine Fillings

    Once the eggs are cooked, add the diced ham, tomato, and shredded cheddar cheese to the skillet. Stir gently until the cheese is melted and everything is heated through, about 2 minutes.

Assembling the Burrito

    Fill the Tortillas

    Lay each flour tortilla on a flat surface. Spoon half of the egg mixture onto the center of each tortilla.

    Top each filled tortilla with guacamole, salsa, and a dollop of sour cream.

    Fold the sides of the tortilla inwards, then roll from the bottom up to enclose the filling. Make sure to keep it tight.
