Preparation of Pico de Gallo

    Chop Ingredients

    Dice the tomatoes, red onion, and jalapeño pepper. Chop the cilantro.

    Mix Pico de Gallo

    In a bowl, combine the diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside.

Avocado Spread Preparation

    Mash Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork.

    Season Avocado

    Add lime juice, salt, and black pepper to the mashed avocado. Mix until well combined.

Toast and Egg Preparation

    Toast Bread

    In a toaster or on a skillet, toast the Texas bread slices until golden brown and crispy.

    Cook Sunny Side Up Egg

    In a non-stick skillet, heat a little oil over medium heat. Crack an egg into the pan and cook until the whites are set but the yolk is still runny.

Assembly

    Spread Avocado

    Spread the mashed avocado generously over each slice of toasted Texas toast.

    Top the avocado spread with a generous spoonful of pico de gallo.
