Pasta Dough

Prepare the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Mix the Filling
In a medium bowl, combine the ricotta cheese, Parmesan cheese, egg yolk, salt, black pepper, and chopped basil. Mix until well combined and smooth.

Simmer the Sauce
Bring the sauce to a simmer and let it cook for about 20 minutes, stirring occasionally until thickened.
Assembling and Cooking Ravioli

Roll out the Dough
After the dough has rested, roll it out on a floured surface to about 1/16 inch thickness. Cut out circles using a round cutter or a glass.

Fill the Ravioli
Place a teaspoon of cheese filling in the center of half of the cut circles. Moisten the edges with water and fold over the other half of the circles to create a pocket. Press to seal tightly.

Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-5 minutes, or until they float to the surface. Remove with a slotted spoon.

Serve
Serve the cooked ravioli topped with the tomato sauce. Garnish with additional basil and grated Parmesan if desired.
