In a large bowl, combine the buttermilk with salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper. Add the chicken thighs to the mixture, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

After marinating, remove the chicken from the buttermilk mixture and let excess drip off. In a separate bowl, combine the flour with salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper. Dredge each piece of chicken in the flour mixture, ensuring an even coating.

Frying the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated chicken pieces. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure an internal temperature of 165°F (75°C). Remove the chicken and place it on a paper towel-lined plate to drain excess oil.
