Prepare the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of yellow rice, reduce heat to low, cover, and simmer for 20 minutes or until rice is tender. Remove from heat and set aside.

Cook the Sausage

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes.

Sauté the Vegetables

Add the chopped onion, bell pepper, and celery to the skillet. Sauté for about 5 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute.

Make the Sauce

Add the canned diced tomatoes (with juices), chicken broth, Cajun seasoning, salt, and black pepper to the skillet. Bring to a simmer and reduce heat to low. Let it cook for about 10 minutes, stirring occasionally.

Add the Shrimp

Stir in the shrimp and cook until they turn pink and are cooked through, about 5 minutes.

Serve

Serve the shrimp and sausage mixture over the prepared yellow rice. Garnish with chopped green onions if desired.
