Prepare the Remoulade Sauce
In a bowl, combine mayonnaise, Dijon mustard, hot sauce, minced garlic, paprika, salt, and black pepper. Mix well and set aside.
Prepare the Shrimp
In a shallow bowl, whisk together buttermilk and eggs. In another bowl, combine cornstarch, flour, Cajun seasoning, salt, and black pepper. Dip each shrimp in the buttermilk mixture, then coat in the flour mixture.
Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Assemble the Po' Boys
Slice the hoagie rolls and spread a generous amount of remoulade sauce on each side. Layer with shredded lettuce, sliced tomato, and fried shrimp. Drizzle with additional remoulade if desired.
Serve
Serve the shrimp po' boys immediately while warm.
