Prepare the Grits
In a medium saucepan, bring 3 cups of water to a boil. Stir in the grits and a pinch of salt. Reduce heat to low and simmer uncovered for about 20-25 minutes, stirring occasionally, until thickened. Stir in the heavy cream and adjust seasoning with salt and pepper to taste.
Cook the Shrimp
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the jumbo shrimp and cook for 2-3 minutes or until they turn pink.
Add the Sauce
Pour in the chardonnay and chicken broth, stirring to combine. Let the mixture simmer for about 5 minutes until slightly reduced. Season with salt and black pepper to taste.
Serve
Spoon the creamy grits onto plates, top with the sautéed shrimp, and drizzle the sauce over the top. Garnish with diced tomatoes, candied ham, and sliced green onions.
