Prepare the Rosemary Demi Glaze

In a saucepan, melt 2 tablespoons of butter over medium heat. Add fresh rosemary and cook for 1 minute until fragrant. Stir in the beef broth and bring to a simmer. Let it reduce by half, about 10-15 minutes. Season with salt and pepper to taste.

Cook the Petite Filet

Season the petite filet with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the filet for about 3-4 minutes on each side for medium rare. Remove from pan and let rest for 5 minutes.

Prepare Loaded Mashed Potatoes

Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot. Mash with 4 tablespoons of butter, milk, sour cream, and cheddar cheese. Stir in chopped green onions and season with salt and pepper.

Grill the Asparagus

Preheat a grill or grill pan to medium-high heat. Toss the asparagus with olive oil, salt, and pepper. Grill for 5-7 minutes, turning occasionally until tender and slightly charred.

Plate the petite filet, drizzle with rosemary demi glaze, and serve alongside loaded mashed potatoes and grilled asparagus.
